●NEW BURDOCK ROOT SALAD-----Shin
Gobou no Sarada

<Ingredients(for four)>
300g new burdock root
100g (1 can) sardine
broad beans (boiled and salt flavored)
parsely (minced)
1/4 vinegar
1/2 tablespoon sugar
90g mayonnaise
salt
black pepper
1)Scrape off the outer skin from the burdock root and
cut into julienne
strips of 4-5 cm in length. Submerge in water to remove
the harshness.
2)In plentious heated water, boil the burdock root for
1-2 minutes. Take it
out into a colander and while it is hot sprinkle salt
and let it cool.
In a bowl toss the boiled burdock root, vinegar, and
sugar. After the burdock
root absorbs vinegar add mayonnaise, sardine, broad
beans and parsely.
Then flavor with black pepper.
